Mit Salz, Pfeffer, K\u00fcmmel w\u00fcrzen. Alles in einen Br\u00e4ter geben. Am besten mit Deckel. Ich verwende einen\u00a0<a href=\"https:\/\/amzn.to\/3Limydu\">Dutch Oven von Petromax<\/a>. Wie immer. Die Rehschulter in einer Gusseisernen Pfanne oder im Dutch, von beiden Seiten scharf anbraten, dabei mit Pfeffer, K\u00fcmmel gemahlen und Salz w\u00fcrzen, mit dunklem Bier abl\u00f6schen.\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nun die Rehschulter auf das Gem\u00fcse in den Dutch geben. Alles mit Wasser und Dunkelbier auff\u00fcllen, bis das Gem\u00fcse abgedeckt ist.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bei ca. 100 Grad im Ofen f\u00fcr mind. 2h schmoren lassen. Nach einer Stunde mal nachschauen ob noch gen\u00fcgend Fl\u00fcssigkeit im Dutch ist.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ich koche, backe und schmore seit kurzem nur noch in meinem Holzofen. Das ist dann Ober\/Unterhitze. Die 100 Grad sind nur ein ungef\u00e4hrer Wert. Ideal ist zwischen 80 und 120 Grad. Bei uns ist das so, bei knapp 200Grad stelle ich den Dutch in den Ofen,&nbsp; dann fallend f\u00fcr eine Stunde und nur noch auf ca.100 Grad halten. Hei\u00dft, nicht mehr so viel Holz nachlegen. Bei 80 Grad kann der Dutch auch f\u00fcr 3h im Ofen bleiben und das Fleisch wird immer zarter.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dazu reiche ich Kartoffelkn\u00f6del. F\u00fcr die So\u00dfe in einer Kasserolle etwas Butter zerlassen, Mehl anschwitzen und drei vier Suppenkellen von dem Bratensaft hinzugeben. Aufwallen lassen und dann \u00fcber die Kn\u00f6del geben.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Zutaten:&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pro Person eine RehSchulter (ca.1,2kg)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ein Bund Suppengr\u00fcn<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">eine Zwiebel<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salz, Pfeffer, K\u00fcmmel gemahlen (nach Geschmack)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">eine Flasche&nbsp;Dunkelbier<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wasser<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Butter&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">ein TL Mehl<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sch\u00e4ufle of venison (shoulder of venison with dumplings)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saut\u00e9 carrots, celery and onions in butter. Season with salt, pepper and caraway. Put them all in a roasting tin. Preferably with a lid. I use a Dutch Oven from Petromax. As always. Then sear the shoulder of venison on both sides, season with pepper, ground caraway and salt, deglaze with dark beer.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Now place the shoulder of venison on top of the vegetables in the roasting tin. Fill everything up with water and dark beer until the vegetables are covered.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leave to braise in the oven at about 100 degrees for at least 2 hours. Check after an hour if there is still enough liquid in the Dutch.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I have recently started cooking, baking and braising only in my wood-burning oven. This is then top\/bottom heat. The 100 degrees are only an approximate value. The ideal temperature is between 80 and 120 degrees. It\u2019s good to bake at 120 for an hour and then switch down. At 80 degrees, the Dutch can stay in the oven for 3 hours and the meat becomes more tender.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I serve potato dumplings with it. For the gravy, melt some butter in a saucepan, sweat the flour and add three four soup ladles of the gravy.
